Grains Are Good!

I was talking on the phone to our daughter in Missouri a few days ago. It sounded like she was eating. What are you eating? I asked. Barley and walnuts, she said.
I was IMPRESSED. She told me it was cold barley, too. She had a stash in her fridge.
Your whole family can learn to enjoy barley! It is inexpensive and so so nutritious.

How to cook barley:
Cooking barley is similar to cooking rice. Cover 1 cup of pearl barley with 2 cups of water or or broth and simmer for 30-40 minutes or more before fluffing with a fork. if you stir it before it is done, you destroy the steam pockets that develop and it will not cook well. Or, try using a rice cooker. Add 2 1/2 cups water per cup of barley.

Barley and your health:
According to the FDA, barley's soluble fiberreduces the risk of coronary heart disease and can lower cholesterol. But that's not all that this amazing food does! Barley also contains insoluble fiber, which reduces the risk of Type 2 diabetes and colon cancer. One cup of cooked barley provides 193 calories, 6 grams of fiber and 3.5 grams of protein. With less than one gram of fat per serving, barley is a virtually fat-free food and is also cholesterol-free.

First Step in Food Storage


Consider seriously what your family NORMALLY eats in a week.

Make a list of what you eat for each breakfast, lunch and dinner and also your snacks...for seven days.

Do not go out for fast food or to a restaurant in those 7 days so you can get an adequate picture of what you need to be providing for your family.

ALSO: Take note of favorite foods of each family member. You will definitely want to purchase some of these items!

Three-Month Supply

Build a small supply of food that is part of your normal, daily diet. One way to do this is to purchase a few extra items each week to build a one-week supply of food. Then you can gradually increase your supply until it is sufficient for three months. These items should be rotated regularly to avoid spoilage.

Then, we are to add to it a....

Longer-Term Food Supply

For longer-term needs, and where permitted, gradually build a supply of food that will last a long time and that you can use to stay alive, such as wheat, white rice, and beans.
These items can last 30 years or more when properly packaged and stored in a cool, dry place. A portion of these items may be rotated in your three-month supply.

I believe the best way to find that extra money you need to buy food storage is to NOT buy food in restaurants. Dollar for dollar you get WAY MORE food and food value (nutrients) from your wise grocery store purchases than from your favorite restaurant. So save your money, by-pass the restaurant and go to Winco, which has the best prices around! You don't have to pay tax on your food, nor are you obligated to tip your server.


Also..you can't put a price on the secure feeling you have when you know you have laid up food for an emergency.

Scenario #4 CAN'T GO TO A FOOD STORE

For the month of January, we will concentrate on how to prepare for Scenario #4: You are unable to go to a food store to obtain food. The stores may be empty because of some kind of disaster which makes it impossible for the trucks to deliver goods to the stores. Or you wallet or bank account may be empty.
In this case: You will want to have had prepared in advance....

A pantry full of food: Your own store, so to speak.

You may not have a pantry in your house. I do not. But I created one out of a coat closet. It is nice to open up that closet and see all that food! I also keep food in a dresser in the closet of one of our bedrooms. And my kitchen cupboards are packed!

Finding places to store you food is fun...it is an opportunity to be creative.

Keychain Flashlight

I cannot tell you how many times I have been "saved" by this little attachment on my key ring. These little LED flashlight cost 99.99 cents at your local 99 Cents Only Store.
I bought this one 4 days ago at the LaPaz St. store here in Victorville. I bought it as a gift for someone. Since I already have one...and have had this on my key chain for over a year and it still work!

My New Car Escape Tool

I got this nifty item for Christmas: A Car Escape Tool !

It is a Glass break hammer and a seat belt cutter. See the blade? I would like to go to "Pick and Pull" and try out the hammer and the blade on some old car and see how well this tool works.
My husband got it for me since he knows I carry a big pair of scissors in my purse ever since I heard the story of a 2 year old girl who died in a burning car because no one could unbuckle her seat belt. You can see the blade on this tool here....but I feel like I need to practice with it.

Utah man, three children rescued after car plunges into river

This video is a great report of what happened.

When I heard this story, I was so amazed at how prepared the rescuers were. They were prepared mentally to not hesitate a second but to go ahead and plunge into an icy river to see how they could help. One guy who shot the car window with his gun because there seemed to be no other way to get inside to the 3 children. The guy who cut the seat belts with his knife said he never leaves the house without 3 things: His gun, a knife, and a pocket flashlight.
Other helpers used coats or blankets they had in their cars to help warm the children. CPR saved 2 of the children! Indeed, that all these rescuers happened upon the scene and acted so quickly and that all were saved was amazing!
